INGREDIENTS
(enough
for 5 persons)
5 whole
crabs
3 shallots
3 cloves
of garlic
ginger
tapioca
flour
sesame oil
1
tablespoon of sugar
pinch of
salt
dash of
pepper
cooking
oil
2 cups of
freshly boiled water

Chilli Crabs 1

Get some whole crabs, preferably live ones. Put the
live crabs in the fridge for two hours to kill them.
Then, remove them from the fridge
and stab them with a knife, as shown in picture. |

Care! Crab may still be moving!
Next, remove the shell using your bare
hands.
Follow as in picture.
Remove the gills. |
|

Wash the crabs under a running tap. Clean with a brush. |
|

Use a cleaver to cut each crab into halves, and then
into quarters. Remove the lower joints of the side legs by
chopping them off. |
|

Next, use the back of a cleaver to crack the pincers.
This makes cooking easier. It
also makes for easier eating, as there is no need to crack open
the pincers later.
