INGREDIENTS

(enough for 5 persons)

5 whole crabs

3 shallots

3 cloves of garlic

ginger

tapioca flour

sesame oil

1 tablespoon of sugar

pinch of salt

dash of pepper

cooking oil

2 cups of freshly boiled water

Get some whole crabs, preferably live ones. Put the live crabs in the fridge for two hours to kill them.

Then, remove them from the fridge and stab them with a knife, as shown in picture.

Care! Crab may still be moving!

Next, remove the shell using your bare hands.

Follow as in picture.

Remove the gills.

Wash the crabs under a running tap. Clean with a brush.

Use a cleaver to cut each crab into halves, and then into quarters. Remove the lower joints of the side legs by chopping them off.

Next, use the back of a cleaver to crack the pincers.

This makes cooking easier. It also makes for easier eating, as there is no need to crack open the pincers later.

Notice that these crabs are rich in roe, seen in the shells.
