Chilli Crabs 2

The crabs have been cut into manageable pieces.
You can steam the shells (with
roe) separately if you wish. |

Next, finely chop some shallots (3),
garlic cloves (3)and ginger (part).
Get ready the chilli sauce and
tomato ketchup. |
|

Pour the chopped shallots, garlic & ginger into a
heated wok with enough oil (2 ladleful). |
|

Fry the mixture till the flavours are released. Then,
fry till golden. Add more oil if necessary. |
|

Next, add some sesame oil.
Continue frying the mixture.
|
|

|
Add the crabs and stir fry. Add a
pinch of tapioca flour.
Then, add tomato ketchup.
Continue with the stir-frying.
