Chilli Crabs 2

 

The crabs have been cut into manageable pieces.

You can steam the shells (with roe) separately if you wish.

Next, finely chop some shallots (3), garlic cloves (3)and ginger (part).

Get ready the chilli sauce and tomato ketchup.

Pour the chopped shallots, garlic & ginger into a heated wok with enough oil (2 ladleful).

Fry the mixture till the flavours are released. Then, fry till golden. Add more oil if necessary.

Next, add some sesame oil.

Continue frying the mixture.

 

Add the crabs and stir fry. Add a pinch of tapioca flour.

Then, add tomato ketchup.

Continue with the stir-frying.
