INGREDIENTS
(Enough for 5 persons)
4 Boon Tong Fish
salt
corn flour

Fried Boon Tong Fish
|

Gut the fish, chop off its tail and add
salt.
Leave fish in
refrigerator for an hour. This lets the salt permeate the fish.
Remove fish, and
dust it with corn flour or rice flour. This is so that the fish will be crispy
when fried. |

Into a heated wok, pour enough oil to
cover the fish totally.
Heat till the oil is very hot. |
|

Add the fish, one at a time.
Use spatula to turn the fish
continually so that it doesn't burn.
Use spatula to ladle oil over the
fish continually.
There is no need to add salt now. |

When fish is cooked, remove from the wok.
That's it.
