INGREDIENTS

(Enough for 5 persons)

2 eggplants

chopped garlic (2)

chopped shallots (2)

pounded dried shrimp - what amount you can pick with your fingers

2 cups of freshly-boiled water

salt

 

 

 


Stir-fried Eggplant

 

Get two eggplants.

Don't use brinjals. Eggplants are tastier for this dish.

Brinjals belong to fish head curry dishes.

Slice the eggplants as shown in the picture.

Keep water running from the tap.

Remember to check for worms. There is no trace of worm infestation on the outside of the eggplant.

Remove worm infected areas as you slice.

Into a heated wok, pour some oil.

Add chopped shallots and garlic.

Stir fry till the flavour comes out.

Add pounded dried shrimp.

Add the eggplants and stir fry. Add salt.

Add a cup of freshly-boiled water.

Cover the wok after a few minutes.

Remove cover after a few minutes to check whether eggplants have softened.

Add more water if necessary.

Once eggplants have softened, it is ready for the table.
